Quinoa Lentil Patties

Vegan | Gluten Free | Makes 10   

Another plant-based favourite from our café. Delicious with tomato chutney, fresh salad, hummus and cashew cheese!

1 cup cooked quinoa
1 cup cooked red lentils
1 chopped red onion
1 clove crushed garlic
1 large carrot
1 large zucchini
1 tbsp Pure Food Essentials Cumin Powder
1 tbsp Pure Food Essentials Sweet Paprika
1 tsp salt
1 cup quinoa flakes
2 tbsp Absolute Organic Olive Oil

Mix quinoa and lentils. Saute onion and garlic. Add carrot and zucchini to lentil mix. Add spices, quinoa flakes and oil. Shape into patties (approx. 10). Fry in olive oil until golden.
