Raw Berry Cheesecake
Base
1 ½ cups almonds
1 cup dates
pinch salt
1 tsp vanilla
Combine in blender, then press into lined base of spring-form pan.
Cake Mix
4 ½ cups raw cashews (soaked overnight)
1 ½ cups maple syrup
4 tsp vanilla
2/3 cup coconut oil
coconut cream (dash to loosen mix)
Mix in 2 lots.
Add 1 cup raspberries/blueberries/mango to first half, pour over base.
Mix 1 cup whole blueberries/raspberries/sour cherries to second mix and pour over first layer.
Top with toasted shredded coconut (5 mins in oven, 200C) and freeze.
